Substitute for Brandy in Sickness
Lean meat chopped fine and put into
a Bottle and boiled in a Water Bath.
The Liquor must be strained through
blotting paper. Has the same Effect
as Brandy but does no harm. Fine
thing for any one after severe brainwork
Baked Herrings
Cut off the heads of 6 herrings
split the flesh. Take out the
Backbone. Chop a spoonfull of
Parsley and chop an onin [onion] up
fine. add a little Thyme and
Marjorum [marjoram]. Take a piece of stale
Bread and crisp it in the
oven, Then Grate it up. Take
a spoonfull of salt and quarter
as much pepper and sprinkle
it over the fish. Make a
layer of fish at the Bottom
of the tin pan and sprinkle
over the Bread Crumbs, Parsly [parsley]
and Onions. Add to Each
layer a little piece of Butter.
A teaspoonful is Enough.
Cover the Bake pan with
another dish and bake
by a slow fire half an
hour.
Curls little. Enough for 5
