  • LEFT PAGE 144 Pickle for Meat To 1 gallon of water, take 1 1/2 #bs [pounds] Salt, 1/2 #b [pound] Sugar, 1/2 oz [ounce] Salpetere [saltpeter] 1/2 oz [ounce] Potash. In this ratio the pickle can be increased to any quantity desired. Let these be Pickle boiled together, until all dirt for from the sugar rises to the top Meat and is skimmed off. Then throw it into a tub to cool, and when cold put in your beef or pork, to remain say 4 or 5 weeks. The meat must be well covered with pickle, and should not be put down for at least 2 days after Killing during which time it should be slightly sprinkled with powdered Salpetere [saltpeter], to remove all the surface Blood. Some people do not boil the pickled, but it is best as it is cleaner.
